As part of a new range of cakes to celebrate Spring; this dessert showcases some of the more interesting flavour combinations to be found in Botany.
Since developing this flavour I’ve found out that Coriander is quite a controversial herb, personally, it is my absolute favorite but I know many people who can’t stand it. This one could divide the crowd but I’m hoping that I may be able to convert some of you Coriander Haters!
The sponge cake is imbued with a combination of vanilla, fresh lime zest and ground coriander seeds, giving a delicately earthy yet citrus taste. Joined by a cream cheese style frosting, infused with coriander herbs, giving it a refreshing sweetness. It is all finished off with a punchy, exotic mango and passionfruit gel; harmoniously tieing the whole cake together.
